While I like to make pimento cheese and eat it just as the universe intended (on crackers, between slices of bread, filling celery sticks) I like to add it to other things too — like macaroni and pc. The other day, I made chile rellenos that were stuffed with pc (serious yum.).
Over sukkot, I made cranberry pc puffs…little biscuit-like bites full of cheese flavor and the sweet from pops of craisin. They were a big hit.
1 cup all-purpose flour
1 cup pimento cheese (whatever your recipe is will be just fine, unless you’ve added anything pickled. If you add pecans, that’s great.)
1 cup craisins, feel free to add more if you like them a lot
1/4 cup butter, softened
Preheat the oven to 350*. Place parchment paper on cookie sheet so it’s ready.
Get the flour and pimento cheese blended in the Kitchenaid, add butter and craisins until a uniform mix.
Place little dollops (I use a small, small ice-cream-scoop) on the parchment paper and bake until done, probably 12-16 minutes.
