Grilled Chicken With Peanut Sauce

Tonight for supper, we tried something new – a grilled chicken (marinated) with a Thai-style peanut sauce. It turned out really nice!

2 boneless, skinless chicken breasts

for the marinade:
1/4 c. brown sugar
1/2 c. Worcestershire sauce
1/2 c. pineapple juice

for the peanut sauce:
1/2 c. smooth peanut butter
2 tbsp. sesame seeds
1 tbsp. brown sugar
4 tbsp. soy sauce
2 tbsp. sesame seed oil
1/2 can coconut milk
(…but the peanut sauce is really to your own personal taste, so you may want more soy sauce and less coconut milk, etc. so these are just estimations, really…)

First, I made the marinade for the chicken – the brown sugar, Worcestershire sauce, and pineapple juice go into a casserole dish along with the chicken, then into the refrigerator for a couple of hours (but it could be as long as overnight):

Next, I made the peanut sauce. I put everything from the sauce list above into a mixing bowl, then tasted and adjusted. Oh…it turned out really nice!

Av put the chicken on the grill, and we had supper outside – tonight was *perfect* weather for being outside!

Whenever we eat outside, we give the dogs the leftovers. They are really well behaved because they know if they are patient, it will pay off! This is Lox – she thought the chicken was yummy!

I couldn’t get a good picture of Bagel tonight, but he enjoyed the peanut sauce especially!
